A hearty, easy to make soup.
This is the way I make lentil soup..
Makes enough for roughly 6-8 portions.
Measurements are not exact.
Add ingredients to preference.
- First, fill the kettle to max – in our case this is 1.7 litres.
- Put the water (hot or cold) into a large soup pot, and turn on the heat.
- Measure half a mug of red lentils in to sieve.
- Wash the lentils under cold water. (the amount of lentils is very much up-to personal taste)
- Add the lentils to the water in the pot.
- Add 3 veg stock cubes (I prefer the gel ones)
- Add a little garlic (optional) – I use puree for ease.. usually just half a teaspoon.
- Add your preferred veg – I add 2 carrots, 1 finely chopped leak, 1 finely chopped onion.
- The stock cubes make it plenty salty enough for me, so i don’t add any more salt.
- Add a few twists of black pepper.
- Add some finely chopped parsley.
- Bring to boil, stir – then simmer for 30mins..
Ready to eat.
Nom Nom Nom!!
After it has cooled – you can refrigerate (or freeze i guess) and then take out and reheat as needed.
